Artichoke Stuffed Mushrooms

Hosted a little “Girls’ Night In” with my coworkers, inviting them over for dinner, crafty good fun and chick-flicks. Took the chance to try out some new recipes. Only with a party do you get the opportunity to make a huge batch of finger foods like Artichoke Stuffed Mushrooms!

This recipe happens to be vegetarian, but it would’ve been awesome to add in some BACON!!! (Everything taste better with bacon!) Or some chopped frozen spinach.

The stuffing is super-rich and creamy, I would have preferred more ingredients to balance out the cream cheese.

The chopping of the mushroom stems, onions, and artichokes took forever, but the fun part was stuffing the mushrooms. I used plain old “white” mushrooms, but I’d say experiment with crimini or portobello.

These were really easy to make and allows plenty of substitutes. After 20-25 mins they came out very moist and flavorful.
