What do you do when you have over ripening bananas? Make banana bread!
The Banana Oat Bread is very moist and fluffy. I had to modify the recipe a bit though. I did not have shortening so I used vegetable oil. I also realized that 2 bananas was not enough for 1.5 cups- but the banana flavor still came through wonderfully. I also excluded the raisins, they were not missed.
